Slow Cooker Lemon Chicken

This Slow Cooker Lemon Chicken recipe is great for those days you know you need an easy dinner. Take a few minutes for preparation at lunch and within a few hours, you will have a delightful smell drifting throughout the house and a meal almost ready. Cook up a big pot of fresh greens, add some brown rice and you have a simple meal that will satisfy the whole family.

To make life easier, I love to use a programmable rice cooker so that the rice will be cooked just in time for dinner as well. Then all that is left to do is throw together a salad or add some steamed greens. Enjoy and be sure to tell me what your family thought of this meal.

For THM purposes, one serve is an E meal when served over 3/4 cup brown rice. Or leave out the rice and you have a FP.
Ingredients
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 kg skinless boneless chicken breast halves
  • 1 tsp butter
  • 1/4 cup water
  • 3 Tbs fresh lemon juice
  • 2 cloves of garlic, minced
  • 1 tsp chicken stock powder
  • 1 tsp fresh parsley, chopped
Instructions
  1. In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
  2. In the same skillet, mix the water, lemon juice, garlic, and chicken stock powder. Bring the mixture to boil. Pour over the chicken in the slow cooker.
  3. Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.
  4. Serve over brown rice.
