Feta and Spinach Quiche

Ingredients
- 1 bag frozen spinach
- 4 eggs
- 1 cup almond milk
- 85g feta, cubed
- ¼ cup grated parmesan cheese
- 1 cup mozzarella cheese
- salt & pepper to taste
Instructions
- Preheat oven to 180•
- Brush or spray a pie dish with coconut or olive oil
- Defrost frozen spinach on the stove-top or in the microwave. Squeeze out excess juice.
- Spread spinach on the base of the pie dish and top with crumbled feta.
- Whisk together eggs, almond milk and parmesan cheese. Pour over spinach and feta.
- Sprinkle with mozzarella cheese.
- Bake for 35-40 mins.
