Feta and Spinach Quiche

As a homeschool mum, I need quick meals I can throw together in 5-10 mins for lunch. This is a simple quiche that pleases everyone. The children don’t even realise they are eating spinach. I hope you enjoy it.

Feta and Spinach Quiche

THM Mamas, this is a quick S for lunch or dinner. Serve with a large tossed salad.
Ingredients
  • 1 bag frozen spinach
  • 4 eggs
  • 1 cup almond milk
  • 85g feta, cubed
  • 1/4 cup grated parmesan cheese
  • 1 cup mozzarella cheese
  • salt & pepper to taste
Instructions
  1. Preheat oven to 180•
  2. Brush or spray a pie dish with coconut or olive oil
  3. Defrost frozen spinach on the stove-top or in the microwave. Squeeze out excess juice.
  4. Spread spinach on the base of the pie dish and top with crumbled feta.
  5. Whisk together eggs, almond milk and parmesan cheese. Pour over spinach and feta.
  6. Sprinkle with mozzarella cheese.
  7. Bake for 35-40 mins.
